บทคัดย่อ: ื The study found that the optimum conditions for Canna edulis Ker extraction consisted of 1:30 (1 g Canna edulis Ker powder : 30 ml distilled water) (w/v), 85?C and 30 minutes. C. edulis Ker extraction gave the prebiotic concentration of 1,250 ?g/ml.The effect of C. edulis Ker extract at 2% levels (v/v) in MRS broth on the growth of Lactobacillus casei subsp. rhamnosus and Lactobacillus acidophilus was experimented at room temperature. The growth curves of L. casei subsp. rhamnosus and L. acidophilus were found that these probiotics would grow into the stationary phase after 18 hrs of incubation with the bacterial numbers of 10.6 log cfu/ml, 9.8 log cfu/ml, was higher than the one of the control (P ? 0.05),respectively. Moreover, the growth of L. casei subsp. rhamnosus and L. acidophilus in fermented milk with and without C. edulis Ker extract showed that the fermented milk supplemented with prebiotic was able to promote L. casei subsp. rhamnosus and L. acidophilus growth reach to 11.1 and 10.2 log cfu/ml (p<0.05) respectively. The survival of probiotic bacteria in the fermented milk which supplemented with C. edulis Ker extract observed under the storage in refrigerator. Fermented milk with C. edulis Ker extract resulted the survival of probiotic bacteria higher than control (96.4 % and 94.8 % respectively) Therefore, Canna edulis Ker can be used as potential prebiotics.
