บทคัดย่อ (EN): Antidesma thwaitesianum Müll. Arg. fruits are widely used for soft drink, wine and healthy food. Dried fruits were extracted using ultrasound assisted extraction method with various ethanol concentrations (25%, 50%, 75%, and 100%) and then determined for total phenolic content of the extracts. The results revealed that the highest total phenolic content of 13.81 mg GAE/mL extract solution was obtained from the extraction with 50% ethanol. Effects of different maturation stages based on the external colors: green, red and black on total phenolic content and antimicrobial activity were investigated. Green fruits showed the highest total phenolic content of 27.87 mg GAE/mL extract solution, followed by red fruits (22.80 mg GAE/mL extract solution), and black fruits (22.63 mg GAE/mL extract solution), respectively. All different maturity fruit extracts of A. thwaitesianum Müll. Arg. exhibited antimicrobial activity against on the both Bacillus cereus and Escherichia coli. Aspergillus flavus was only inhibited by black fruit extracts.
