บทคัดย่อ: Study on Productive Performance, Carcass Composition, Meat Quality and Enzyme Calpains Activity on Meat Tenderness of Southern Thai Indigenous Goat and Crossbred Goat These research was conducted to investigate the effects of breed and muscle types on growth performance, carcass composition and meat quality traits. A total of twenty males from Thai indigenous (TI) goat and crossbred (CB) goat (Boer x Sanan x Native) were used in this study. Goats were fed fresh Napier grass ad libitum and supplemented with concentrate for 1.5% of body weight. After 120 day of feeding periods, goats were slaughtered and sample from Longissimus dorsi (LD), Infraspinatus (IF) and Vastus lateralis (VL) muscles were obtained from each animal for measurement meat quality. The results shown that breeds had on effect on carcass length, carcass percentage and lean percentage but the cross bred goat had higher hind leg percentage, fat and bone percentage than the TI goat. Breeds had no effect on pH value, cooking loss, muscle fiber diameter, sarcomere length and shear force. TI goats had lower L* value of meat color and had larger muscle fiber diameter than the CB goats (p<0.01). The CB goats had higher insoluble collagen content and total collagen content but had lower soluble collagen percentage than the TI goats. Statistically significant difference were found among three muscle types on pH1 value, muscle fiber diameter, sarcomere length and shear force value (p<0.01). The LD muscle had lower pH1 value than IF and VL muscles. It was found that the IF and VL muscles had larger muscle fiber diameter than the LD muscle while the VL muscle had the smallest sarcomere length and lowest shear force value. There was no different in Calpain1 and Calpain2 between the TI and CB goat meat. Calpain activity tend to higher in LD muscle than IF and VL muscle. These results suggest that the breed of goat and type of muscles have an impact on some meat quality traits and also meat tenderness.
