บทคัดย่อ (EN): g/ml. The highest yield of the extract was 6.50% w/w. No Sa thon leaf extracts showed inhibiting effects against Candida albicans ATCC 10231. The study of microbial contamination of chili pastes with and without Sa thon sauce revealed that the CFU numbers did not exceed the standard microbial limitation recommended by the Department of Medical Science, Ministry of Public Health. The total bacteria count of Sa thon chili pastes was significantly lower than the control (P<0.05). Although Sa thon sauce showed antimicrobial activity when added to chili paste, it is not recommended to be used as a food preservative for other foods because of weak antimicrobial and antioxidant activities and its unique smell and taste.
