บทคัดย่อ (EN): Commercially, “free range” poultry farming is a system where birds are given free access to pasture and the accredited Code of Practice is that they must not be stocked above 1000 birds/hectare. Because of the high demand for organic eggs, most free-range egg producers in Europe, Australia, Africa and the USA are fully accredited to sell their products as “organic” or “free-range” in the market. Thus, eggs are now being produced in free-range systems and marketed through regular supermarket outlets. In developing countries, village level production is generally free-range and there is a preference for free-range rather than for intensively produced poultry products. From a nutritional point of view, there are, in fact, some differences in the chemical composition of eggs obtained from cage, deep litter and free-range systems. Major differences were found only with respect to folic acid and vitamin B12, and small but significant variations were found in Ca, Fe and tocopherol concentrations. The higher concentrations of vitamin B12 in the free-range and deep litter eggs may possibly have resulted from an increased amount of this vitamin having been available for absorption from two sources: microbial synthesis within the birds themselves and also from litter or, for the free-range birds, from the herbage and soil.
