บทคัดย่อ: “The potential crop production development of Moon flower (Ipomoea alba.) for healthy food” at Agricultural Technology Research Institute, Rajamangala University Technolgoy Lanna is consisted of three research projects, i.e. the collection of moon flower cultivars, technology development to increase moon flower produce and the functional food development from moon flower. The objectives were to 1) to collect and screen the moon flower cultivar possessing high yield with appropriate properties for health food 2) to develop the product for health from moon flower with commercial value addition at least two types 3) to develop the production technology in order to obtain high yield moon flower with appropriate properties for health food 4) to create (build) new knowledge to promote knowledge management process which is able to cumulate for career building with stable income. The results are provided in the following. The number of 20 clones of moon flower from different growing areas of seven provinces such as Lamphun, Lampang, Chiang Mai, Phra, Sukothai, Meahongson and Phayao. The experiment were conducted at Agricultural Technology Research Institute, Rajamangala University of Technology Lanna, during March 2015 to December 2016. The result showed that the clone of moonflower code LP03 CM02 PR02 and SK01 gave the highest of the leaf area , with an average of 266.48 and 267.14 267.33 267.11 square centimeters, respectively.Moon flower code CM02 gave the highest of length petiole (i.e. 16.24 cm.). Moon flower code LPh01 LPh02 LP02 LP03 SK01 PY01 and PY02 gave the highest of leaves width with an average 12.33 11.80 11.60 11.76 12.41 12.53 and 11.55 cm.,respectively.Moon flower codeLP01gave the highest of leaf length (i.e. 12.75 cm.). Moon flower codeLPh01gave the highest of leaf greenness(i.e. 55.81 SPAD). The clone of moonflowerMA01gave the highest of the chlorophyll B and total chlorophyll (i.e. 0.9335 and1.4552 mg/g).The clone of moonflowerLPh01gave the highest of the stomata (i.e. 792.83 stoma). The clone of moonflowerCM01gave the highest ofphenolic (i.e. 1792.80 mg/g). The clone of moonflowerLPh04MA01CR01PY01andPY04gave the highest ofphenolantioxidant (i.e. 98.0097.8398.7598.71 และ 98.28 %, respectively). Clones of moon flower from different growing areas did not affect stem diameter, chlorophyll a, flower size, fresh weight and dry weight of flowers,soluble solids and pH of flowers. The Development of Technology for Increase Yield of Moon Flower.The study is scheduled for three experiments such as Experiment 1the effect of the concentration of potassium nitrate fertilizer4 levelsi.e. 0, 1, 2 and 3 % Experiment 2the effect of paclobutrazol concentration4 levelsi.e. 0, 100, 200 and 300 ppm. orExperiment3effect of pruning(not pruning, cut into 25 cm from the apex and cut into 50 cm from the apex). The experimental design was completely randomized design (CRD) with 4 potassium nitrate concentrations (0, 1, 2, and 3 %). Five replications per treatment were carried out. at Agricultural Technology Research Institute, Rajamangala University of Technology Lanna. Experiment 1The effect of the concentration of potassium nitrate fertilizer to increase the yield of moon flowers.The resulted show thatAfter spraying potassium nitrate 3 months, the plant were treated 2 and 3% gave the highest of leaf width, leaf length and leaf greenness (i.e. 8.24, 8.96, 10.74 and10.30 cm, 33.50 and33.50 SPAD, respectively).The plant were treated 3% gave the highest of chlorophylla (i.e.0.56 ). The plant were treated 1 and 3% gave the highest of flower fresh weight (i.e. 2.78and2.67 g., respectively). The plant were treated 1 and 2% gave the highest of flower dry weight (i.e. 0.34and0.32g., respectively). The plant were treated 2 and 3% gave the highest of total non structal carbohydrate content (i.e. 221.80 and217.21 mg/g dry weight., respectively). The spraying potassium nitrate concentration all levels not affect on shoot diameter, chlorophyll b, fresh weight and dry weight of leaves, antioxidant and phenolic content. Experiment 2The effect of paclobutrazol concentration on yield of moon flower,After the six-month.The resulted show that the plant were treated with paclobutrazol at 300 ppm gave the higher of stem diameter than the other treatment. The plant were treated with paclobutrazol at 100-300 ppm did not affect on leaf size, leaf greenness, chlorophyll a andb, total non structural carbohydrate content. The plant were treated with paclobutrazol all treatments gave the flowering 10% while higher concentrations result in no development of flowers. Experiment3Effect of pruning on increase the yield of moon flowers.The result showed that the plant werecut into 50 cm from the apexgave the highest of Stem diameter. All pruning methods did not affect Number of branch, Leave size,Leave greenness, Number of flower, Weigh of flower and flower size. Moon flower is a local plant used for food consumption. The objectives of this research were to investigate the chemical compostion of moon flower and to develop the functional food product from moon flower. The results revealed that the chemical composition of moon flower was approximately as follows: moisture (90.10+0.38%), protein (1.69+0.01%), fat 0.39+0.01, ash (0.69+0.01%), crude fiber (0.74+0.01%), carbohydrate (7.13+0.36%), total phenolic compounds (992.54+361.53 mg/kg) and antioxidant activity (84.52+9.56% ABTS scavenging effect). The study of drying of moon flower showed the values of water activity (Aw) in dried moon flower between 0.55-0.58. Aw of dried moon flower was not affected by different solution types and concentration levels (p>0.05) whereas solution types affected statistical significance of the total phenolic content and antioxidant activity in the dried products. The study of preparation of moon flower extract resulted in different types of extract agents and proportions of moon flower and water influenced difference of color values and phenolic content in moon flower extracts (p?0.05), however, there were no significant difference of antioxidant activity in the moon flower extract (p>0.05). The production of moon flower beverage using the mulberry juice in the blend was performed. The product with different blending of moon flower extract had different chemical and sensory quality. The use of 15% moon flower extract in the production of the moon flower-mulburry beverage for study consumer acceptance indicated that consumers evaluated scores for sensory attributes of color, odor, flavor and overall preference in the range of like moderately to like very much. The survery suggests that 53% consumer decided to buy the moon flower-mulburry beverage product. The shelf life study of moon flower-mulberry beverage product showed that the storage temperature was the important factor affecting chemical and sensory quality of the product.
